About Papas Ceviche
Papas Ceviche is the creation of Chef Nick Pelayo — a lifelong culinary professional who grew up surrounded by the bold, coastal flavors of Baja-style Mexican cooking. After years in professional kitchens, Chef Nick set out to bring those family recipes and that same level of craft to the Huntsville area.
